Ingredients
- 2 tablespoons vegetable oil
- 1.5 pounds beef stew meat
- 1 large chopped onion
- 1 - stalk celery, chopped
- 1 - minced garlic clove
- 1.25 cups boiling water
- 2 cups fresh cranberries
- 1/2 cup walnuts, coarsely chopped
- 1 tablespoon cider vinegar
- 1 tablespoon honey
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ginger, ground
- 1/4 teaspoon cloves, ground
- 1/8 teaspoon cayenne pepper
- 1/2 cup raisins
How To Make beef stewed in cranberry chutney

Step 1Heat oil in a large skillet.

Step 2Add beef and brown on all sides.

Step 3Add onions and celery and saute until golden brown.

Step 4Add garlic and saute mixture 1 minute longer, stirring constantly. (Do not let garlic change color)

Step 5Stir water into mixture, then add remaining ingredients.

Step 6Cover and simmer for 1-1/4 hours, or until beef is tender and liquid is reduced to 1/3 to 1/2 cup.

Step 7If pan juice gets too low during cooking, add a little hot water.

Step 8Or, if pan juice does not reduce sufficiently, uncover skillet during last 30 minutes of cooking and stir often.

Step 9Taste to correct seasonings.

Step 10Stew goes well with brown rice.

Step 11Makes 4 servings.
