beef stew

this was my first time trying to make a stew, the family loved it. it was also great for leftovers to take for lunch. we even had enough to have it again later in the week, when reheating i added 2 cups of fresh green beans and served it over rice

Ingredients

  • 1 cup leek or onion finly chopped
  • 1 tablespoon minced garlic
  • 2 tablespoons olive oil
  • 2 packages stew beef
  • 1 can stew tomatos- italian style
  • 3 cans beef broth
  • 5 cups water
  • 1 1/2 cups chopped celery
  • 2 cups potatoes peeled & diced
  • 1 cup carrots, peeled & chopped
  • 1 cup cauliflower, small florets
  • 2 - bay leaves, dried
  • 1 1/2 teaspoons cayenne pepper
  • 1 1/2 teaspoons peprika
  • 2 teaspoons oregano, dried
  • 1 1/2 teaspoons sugar
  • 2 tablespoons fresh parsley
  • 1 1/2 teaspoons pepper
  • - salt to taste

How To Make beef stew

  • Step 1
    brown stew meat with a little salt and pepper. after browned remove from pot. in same pot soften the leeks/onion, garlic and celery with olive oil and salt to taste
  • Step 2
    add tomatos, broth, water, oregano, bay leaves and let come to a boil
  • Step 3
    add meat, potatoes, cayenne, peprika, pepper,sugar and stew on med to low heat for 30 min.
  • Step 4
    add cauliflower, carrots and fresh parsley. continue to stew for additional 20 min. add salt to taste, remove bay leaves and serve * I love to serve on top of a scoop of white or brown rice*
