Ingredients
- 4 pounds beef chuck, boneless and cubed
- 1 large sweet onion rough chopped
- 4 - celery ribs sliced
- 6 large carrots, cubed
- 3 pounds potatoes, medium cut in 4's
- 4 cloves garlic sliced
- 1 package frozen green peas
- 1/2 cup roux (tan)
- 1/2 stick butter
- 3-4 - bay leaves, dried
- 1/2 tablespoon salt and pepper
- 1/2 tablespoon black pepper
- 1 tablespoon beef bouillon,4 cubes or 1 tablespoon paste
- 2 tablespoons kitchen bouquet
- FOR THE BISCUITS
- 1 box self-rising buttermilk corn meal
- 1 quart buttermilk
- 1 can 8 oz. creamed corn
- 1 pinch red pepper flakes
- 1 cup grated sharp cheddar cheese
How To Make beef stew with buttermilk cheddar corn biscuits

Step 1Using a large stock pot,season the beef,garlic and onions with salt and pepper,add about 1/4 cup of canola oil to the beef and coat well,start browning the mixture on a high heat.

Step 2After the meat has been browned on all sides and the onions,garlic are translucent,cover the meat with water filling the pot about three inched above the meat and continue to let it boil for about twenty minutes on high,then lower to a medium heat.

Step 3Now you want to add the remainder of vegetables,leaving the frozen peas for last.Add the bay leaves,beef paste,kitchen bouquet.Bring it back up to a boil,cook until vegetables are tender,thicken with the roux.(You made need more roux depending on how thick you like your stew)

Step 4After the stew is thickened,add the peas and the half of stick of butter,ladle into bowls and serve with a hot biscuit with butter! Yum! Yum! Enjoy! :)

Step 5For the biscuits,follow the directions on the box to make the biscuits only adding in the cheese and red pepper flakes to the batter. If your box does not have a recipe on it you can go by a box of Bisquick if you have one or just Google it!!
