my grandmother, who was born in puerto rico, taught me how to do this stew. not sure how authentic it is, but it sure tastes good!

Ingredients
- 8 - red potatoes (quartered)
- 8 - carrots, peeled and chopped into chunks
- 2 pounds beef stew meat
- 2 cans beef broth
- 1 can tomato sauce, small can
- 2 packages achiote seasoning
- dash salt and pepper
- dash oregano
- dash seasoned salt
- 1 cup green stuff
- 1 - bag, frozen peas
- 4 cups rice
How To Make beef stew

Step 1First off, the recipie for green stuff: 8 onions, 4 bell peppers (3 green, 1 red), 1 head of garlic and one bunch of cilantro. Use a food processor to chop very fine. then add about 2 TBSP of EACH extra virgin olive oil, and apple cider vinegar. finally, stir in about 3 TBSP of dried oregano.

Step 2put the potatoes and the carrots in the bottom of the crockpot, then the beef. season liberally.

Step 3add the beef broth, tomato sauce, green stuff and then enough water to just cover the meat.

Step 4cook in the slow-cooker for about 6 hours on low, and about 20 minutes before serving, toss in the frozen peas and give it a stir

Step 5serve over rice
