my grandmother, who was born in puerto rico, taught me how to do this stew. not sure how authentic it is, but it sure tastes good!

Ingredients

  • 8 - red potatoes (quartered)
  • 8 - carrots, peeled and chopped into chunks
  • 2 pounds beef stew meat
  • 2 cans beef broth
  • 1 can tomato sauce, small can
  • 2 packages achiote seasoning
  • dash salt and pepper
  • dash oregano
  • dash seasoned salt
  • 1 cup green stuff
  • 1 - bag, frozen peas
  • 4 cups rice

How To Make beef stew

  • Step 1
    First off, the recipie for green stuff: 8 onions, 4 bell peppers (3 green, 1 red), 1 head of garlic and one bunch of cilantro. Use a food processor to chop very fine. then add about 2 TBSP of EACH extra virgin olive oil, and apple cider vinegar. finally, stir in about 3 TBSP of dried oregano.
  • Step 2
    put the potatoes and the carrots in the bottom of the crockpot, then the beef. season liberally.
  • Step 3
    add the beef broth, tomato sauce, green stuff and then enough water to just cover the meat.
  • Step 4
    cook in the slow-cooker for about 6 hours on low, and about 20 minutes before serving, toss in the frozen peas and give it a stir
  • Step 5
    serve over rice
