This recipe was given to me many years ago by a close friend and I have no Idea where she got it all I can say is that its hearty, filling and great on a cold night.

  • 1 1/2 lb
    beef chuck, boneless
  • 2 tbsp
    cooking oil
  • 3 lg
  • 1 16OZ can(s)
    tomatoes, canned and cut up
  • 1 c
    chopped onion
  • 1
    chopped green pepper
  • 1/2 c
  • 1/4 TSP
  • 2 clove
    glarlic, minced
  • 1 TSP
  • 1/8 TSP
  • 1 can(s)
    corn, drained
  • 2 medium
    zucchini ,sliced

How to Make Beef Stew


  1. In a dutch oven brown meat 1/3 at a time in hot oil,drain
    return all the meat to the pan, add potatoes,undrained tomatoes,onions,green peppers,water ,cinnamon,garlic,salt and pepper
  2. If you want you can transfer the mixture to a 3 quart casserole and bake covered in a 350 degree oven for 1 1/4 hours stir in corn and zucchini bake 45 min longer.
    when finished add a little more salt & pepper to taste
  3. I never use a casserole dish I complete the whole meal in a dutch oven.
