This recipe was given to me many years ago by a close friend and I have no Idea where she got it all I can say is that its hearty, filling and great on a cold night.

Ingredients

  • 1 1/2 pounds beef chuck, boneless
  • 2 tbsp - cooking oil
  • 3 lg - potatoes
  • 1 16OZ cans tomatoes, canned and cut up
  • 1 cup chopped onion
  • 1 - chopped green pepper
  • 1/2 cup water
  • 1/4 TSP - cinnamon
  • 2 cloves glarlic, minced
  • 1 TSP - salt
  • 1/8 TSP - pepper
  • 1 can corn, drained
  • 2 medium zucchini ,sliced

How To Make beef stew

  • Step 1
    In a dutch oven brown meat 1/3 at a time in hot oil,drain return all the meat to the pan, add potatoes,undrained tomatoes,onions,green peppers,water ,cinnamon,garlic,salt and pepper
  • Step 2
    If you want you can transfer the mixture to a 3 quart casserole and bake covered in a 350 degree oven for 1 1/4 hours stir in corn and zucchini bake 45 min longer. when finished add a little more salt & pepper to taste
  • Step 3
    I never use a casserole dish I complete the whole meal in a dutch oven.
