Ingredients

  • 3/4 c
    picante sauce
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    red wine vinegar
  • 1/2 tsp
    oregano, crushed
  • 1
    clove garlic, minced
  • 3/4 lb
    roast beef deli style, sliced 1/4"
  • 1
    tomato, chopped
  • 1
    cucumber
  • 1
    red bell pepper, seeded and thinly sliced
  • 1 c
    thinly sliced celery
  • 1 c
    red onion, thinly sliced

How to Make Beef Salad Ole

Step-by-Step

  1. Cut cucumber lengthwise into quarters, seeded and thinly sliced.
  2. Combine picante sauce, oil, vinegar, oregano and garlic; mix well.
  3. Place beef in plastic bag; pour half of picante sauce mixture into bag.
  4. Close bag securely; chill at least 1 hour or up to 12 hours.
  5. Just before serving, arrange meat and vegetables on serving platter.
  6. Pass remaining dressing and serve with additional picante sauce.
