Ingredients
- 6 slices sirloin tip roast, cut in wedges
- - salt
- - pepper
- 2 - carrots, peeled
- 1 - onion
- 1 - green bell pepper
- 3 slices bacon, uncooked
- 3 tablespoons bacon fat
- SAUCE INGREDIENTS
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 2 cups milk
- 1/2 cup mushrooms, drained
- 1 tablespoon parsley
- 1 teaspoon worcestershire sauce

Step 1FOR THE BEEF:

Step 2Coat meat well with mixture of flour, salt and pepper.

Step 3Cut each carrot into 3 pieces.

Step 4Cut onion into 6 wedges and green pepper into 6 strips.

Step 5Slice bacon strips into 3 pieces each.

Step 6Place a piece of uncooked bacon, carrot, onion and green pepper on each piece of meat and roll up.

Step 7Tuck under ends to keep vegetables inside the roll.

Step 8Insert wooden picks through folded ends and through center of each roll.

Step 9Melt fat in skillet.

Step 10Slowly brown meat rolls on all sides.

Step 11Place meat rolls in casserole.

Step 12FOR THE SAUCE:

Step 13Melt butter.

Step 14Blend in flour, salt and pepper.

Step 15Heat until it bubbles.

Step 16Remove from heat and gradually stir in milk.

Step 17Return to heat and cook rapidly, stirring constantly, until sauce thickens.

Step 18Add mushrooms, parsley and worcestershire sauce.

Step 19Pour over meat.

Step 20Cover casserole and bake at 350 for 1 to 1 1/2 hours or until meat is tender when pierced with a fork.
