Ingredients
- ROAST
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 pounds flank steak
- 1 teaspoon dijon mustard
- STUFFING INGREDIENTS
- 2 tablespoons vegetable oil
- 1 small onion, chopped
- 4 ounces mushrooms, small pieces
- 1/2 cup chopped parsley
- 2 tablespoons chopped chives or scallions
- 1 tablespoon tomato paste
- 1/2 cup bread crumbs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon paprika
- GRAVY INGREDIENTS
- 3 slices bacon, chopped
- 2 small onions, chopped
- 1 cup beef broth, hot
- 1 teaspoon dijon mustard
- 2 tablespoons ketchup
How To Make beef roast with mushroom stuffing

Step 1Lightly salt and pepper flank steak.

Step 2Spread one side with mustard.

Step 3To prepare stuffing, heat vegetable oil in a frypan, add onion and cook for 3 minutes, until lightly browned.

Step 4Add mushroom pieces; cook for 5 minutes.

Step 5Stir in parsley, chives, tomato paste and bread crumbs.

Step 6Season with salt and pepper and paprika.

Step 7Spread stuffing on mustard side of the flank steak, roll up jelly-roll fashion and tie with thread or string.

Step 8To prepare gravy, cook bacon in a dutch oven until partially done.

Step 9Add the meat, roll and brown on all sides, approximately 10 minutes.

Step 10Add onions and saute for 5 minutes.

Step 11Pour in the beef broth, cover dutch oven and simmer for 1 hour.

Step 12Remove meat to a preheated platter.

Step 13Season pan juices with mustard.

Step 14Salt and pepper to taste; stir in ketchup.

Step 15Serve the gravy separately.
