Ingredients For beef roast in instant pot

  • 1 Tbsp
    vegetable oil
  • 3 1/2 lb
    beef chuck roast
  • 2
    sliced white onions
  • 1/4 c
    balsamic vinegar
  • 1 c
    chicken broth
  • 2 Tbsp
    dark soy sauce
  • 1 Tbsp
    oyster or fish sauce
  • 1 pinch
    dried thyme
  • 1 pinch
    dried rosemary
  • 2
    bay leaves
  • 4
    peeled/cubed potatoes
  • 4
    peeled/cubed carrots
  • 1 Tbsp
    corn starch

How To Make beef roast in instant pot

  • 1
    Heat oil in instant pot on SAUTE. Salt/pepper the roast and place in instant pot for 10 minutes on each side on saute setting. Remove roast.

    Deglaze the pot with the balsamic vinegar.

    Add broth, soy sauce, oyster or fish sauce, rosemary, thyme, bay leaves and the Roast.

    Pressure cook for 45 minutes with Natural release.
  • 5
    Remove roast and add vegetables and cornstarch, stirring. Pressure cook for 4 minutes. Quick release.
