Ingredients
- 1 tablespoon vegetable oil
- 3 1/2 pounds beef chuck roast
- 2 - sliced white onions
- 1/4 cup balsamic vinegar
- 1 cup chicken broth
- 2 tablespoons dark soy sauce
- 1 tablespoon oyster or fish sauce
- 1 pinch dried thyme
- 1 pinch dried rosemary
- 2 bay leaves
- 4 peeled/cubed potatoes
- 4 peeled/cubed carrots
- 1 tablespoon corn starch
How To Make beef roast in instant pot

Step 1Heat oil in instant pot on SAUTE. Salt/pepper the roast and place in instant pot for 10 minutes on each side on saute setting. Remove roast.

Step 2Deglaze the pot with the balsamic vinegar.

Step 3Add broth, soy sauce, oyster or fish sauce, rosemary, thyme, bay leaves and the Roast.

Step 4Pressure cook for 45 minutes with Natural release.

Step 5Remove roast and add vegetables and cornstarch, stirring. Pressure cook for 4 minutes. Quick release.
