Beef & Potato Loaf
4 largepotatoes - peeled and very thinly sliced
1 mediumonion - finely chopped and devided evenly
2 lblean ground beef
1 can(s)evaporated milk
3/4 - 1 cfinely crused crackers - i used club crackers
·salt and pepper
·additional catsup for toppiing (optional)
1 stickbutter - cut in slices
How to Make Beef & Potato Loaf
- Arrange the very thinly sliced potatoes evenly in a greased 9X13 pan. Scatter the thin slices of butter evenly over the top of the potatoes. Sprinkle over the top of the potatoes and the butter 1/2 of the finely chopped onion, salt and pepper to taste, and parsley flakes to taste.
- Mix together the hamburger, evaporated milk, finely crushed crackers, catsup, the other half of the chopped onion, and salt and pepper to taste. I also added a little paprika - optional.
- Spoon hamburger mixture and spread evenly over the potatoes. Spread the top evenly with a thin layer of catsup if desired. Bake 375 degrees for about 1 hour or until meat mixture is cooked and the potatoes are tender.
