I needed to find something to make for supper with hamburger. I had no idea what to make. Coming up on the end of the month the pantry and fridge are getting pretty bare. This is what I came up with and my husband and I thought it was out of this world! I think you'll like it too!

Ingredients

  • 4 large potatoes - peeled and very thinly sliced
  • 1 medium onion - finely chopped and devided evenly
  • 2 pounds lean ground beef
  • 1 can evaporated milk
  • 3/4 - 1 cups finely crused crackers - i used club crackers
  • 1/2 cup catsup
  • - salt and pepper
  • - parsley flakes
  • - additional catsup for toppiing (optional)
  • 1 stick butter - cut in slices

How To Make beef & potato loaf

  • Step 1
    Arrange the very thinly sliced potatoes evenly in a greased 9X13 pan. Scatter the thin slices of butter evenly over the top of the potatoes. Sprinkle over the top of the potatoes and the butter 1/2 of the finely chopped onion, salt and pepper to taste, and parsley flakes to taste.
  • Step 2
    Mix together the hamburger, evaporated milk, finely crushed crackers, catsup, the other half of the chopped onion, and salt and pepper to taste. I also added a little paprika - optional.
  • Step 3
    Spoon hamburger mixture and spread evenly over the potatoes. Spread the top evenly with a thin layer of catsup if desired. Bake 375 degrees for about 1 hour or until meat mixture is cooked and the potatoes are tender.
