4-5 lb
beef bottom roast, boneless trimmed
2 Tbsp
lime or lemon juice
1 Tbsp
prepared mustard
minced garlic cloves
6 oz
spicy tomato juice
1/2 can(s)
chili sauce
jalapeno chile peppers, seeded and finely chopped
2 Tbsp
fresh cilantro or parsley, chopped
2 tsp
cumin seeds
2 Tbsp
worcestershire sauce

How to Make Beef-Pot Roast Tex-Mex Style


  • 1Put meat in shallow plastic dish just large enough to hold it.
  • 2Combine worcestershire, lime or lemon juice, mustard and garlic.
  • 3Spread mixture over meat.
  • 4Cover and refrigerate overnight.
  • 5Roast meat in preheated 325 degree oven for 1 hour.
  • 6Combine remaining ingredients; pour over meat.
  • 7Cover and roast 3 to 4 hours more at 275 degrees until meat is very tender.
  • 8Baste occasionally with pan juices. (Thin with a little boiling water if necessary.)
  • 9Slice thinly to serve.
  • 10Makes about 6 to 8 servings.
