Ingredients
- 1 1/2 pounds lean ground beef
- 1 can (28-ounce) diced tomatoes (save the juice)
- 4 cloves garlic, chopped
- 2 tablespoons chili powder to desired heat likeness
- 1 tablespoon cumin
- 1 can (16-ounce) refried beans, fat-free
- 1 can (4-ounce) green chilies, diced
- 1 can (4-ounce) black olives, sliced
- 1 cup low-fat colbyjack cheese, divided
- 18 - (6-inch) flour tortillas (can use less of a larger tortilla)
- GARNISHES
- - lettuce, shredded
- - sour cream
- - guacamole
- - salsa
How To Make beef 'n bean burritos

Step 1Preheat oven to 375 degrees.

Step 2In a large skillet over medium-high heat, cook ground beef until brown, drain and rinse.

Step 3Return meat to skillet, reduce heat to medium and add tomatoes, 1/2 cup reserved tomato juice, chili powder, garlic, cumin, refried beans, green chilies, black olives, and 1/2 cup cheese.

Step 4Cook for about 10 minutes, blending well.

Step 5Fill each tortilla with about 1/3 cup mixture, roll up, and place in greased baking dish(es), seam side down.

Step 6Pour any extra beef mixture around sides of tortillas.

Step 7Sprinkle with the rest of the cheese.

Step 8Bake for 20 minutes, or until the cheese is bubbly.

Step 9Serve with garnishes desired.
