This recipe could also be made with chicken, pork, or no meat at all. If you make it meatless, increase to 2 carrots, shredded, and 3 to 3-1/2 cups of bok choy or napa cabbage.

Ingredients

  • 4 tablespoons peanut oil
  • 3/4 pound sirloin steak
  • 2 - celery stalks, shredded
  • 1 - carrot, shredded
  • 2 slices ginger root, minced
  • 2 cups bok choy or napa cabbage
  • 2 - green onions, finely chopped
  • 2 teaspoons cornstarch
  • 1/2 pound spaghetti noodles, cooked
  • 1/2 teaspoon sugar
  • 1 tablespoon soy sauce, light
  • 1/2 teaspoon salt

How To Make beef lo mein

  • Step 1
    Cook spaghetti as directed on package, AL DENTE, drain, rinse in cold water, add a few drops oil and mix to keep from sticking.
  • Step 2
    Set aside.
  • Step 3
    Slice steak VERY THIN, across the grain, into 2" pieces.
  • Step 4
    Mix together, steak, minced ginger, green onion, cornstarch, sugar and light soy, and set aside to marinate.
  • Step 5
    Heat wok to smoking; add 2 tablspoons oil.
  • Step 6
    Stir fry meat mixture two minutes, or until no longer pink; do not overcook. Remove from wok and set aside.
  • Step 7
    Add 2 tablespoons oil and heat; stir fry carrots, celery and cabbage two minutes; add cooked spaghetti, stir well and cook a few minutes. Add meat mixture, 1 tablespoon soy sauce, and salt.
  • Step 8
    Stir a minute to heat and serve.
