beef liver and onions
It appears that I have this recipe posted twice. Sigh. Please ignore this one and use the following recipe instead. I don't remember where I got it, but most folks who like liver really love it. There have been a couple of occasions where it converted a couple of 'haters' too. lol.

Ingredients
- 1 1/2 pounds liver
- 1/4 cup flour
- 3 slices bacon
- 1/2 cup onion, sliced
- 1/2 cup beef broth
- 1/4 cup water
- 1/8 teaspoon pepper
- 1/8 teaspoon tarragon
How To Make beef liver and onions

Step 1Coat liver with flour; set aside.

Step 2Brown bacon; drain on paper towels.

Step 3Brown onions in bacon drippings.

Step 4Brown liver quickly in same skillet, about 1 minute on each side. Drain fat.

Step 5Combine broth, water, liver, pepper and tarragon.

Step 6Cover and simmer 20 minutes until liver is fork tender.

Step 7Uncover; top with bacon.

Step 8Simmer uncovered 5 to 10 minutes until sauce is consistency of gravy.
