I've had this recipe for probably 40 years. I don't remember where I got it, but most folks who like liver really love it. There have been a couple of occasions where it converted a couple of 'haters' too. lol.

Ingredients

  • 1 1/2 lb
    liver
  • 1/4 c
    flour
  • 3 slice
    bacon
  • 1/2 c
    onion, sliced
  • 1/2 c
    beef broth
  • 1/4 c
    water
  • 1/8 tsp
    pepper
  • 1/8 tsp
    tarragon

How to Make Beef Liver and Onions

Step-by-Step

  1. Coat liver with flour; set aside.
  2. Brown bacon; drain on paper towels.
  3. Brown onions in bacon drippings.
  4. Brown liver quickly in same skillet, about 1 minute on each side. Drain fat.
  5. Combine broth, water, liver, pepper and tarragon.
  6. Cover and simmer 20 minutes until liver is fork tender.
  7. Uncover; top with bacon.
  8. Simmer uncovered 5 to 10 minutes until sauce is consistency of gravy.
