beef flank steak with mushroom stuffing

Ingredients
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 pounds flank steak
- 1 teaspoon dijon mustard
- STUFFING INGREDIENTS
- 2 tablespoons vegetable oil
- 1 small chopped onion
- 4 ounces mushrooms, sliced and drained
- 1/4 cup chopped parsley
- 2 tablespoons chopped chives or scallions
- 1 tablespoon tomato paste
- 1/4 cup bread crumbs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon paprika
- GRAVY INGREDIENTS
- 3 slices bacon, chopped
- 2 small onions, finely chopped
- 1 cup beef broth, hot
- 1 teaspoon dijon mustard
- 2 tablespoons ketchup
How To Make beef flank steak with mushroom stuffing

Step 1Lightly salt and pepper steak on both sides.

Step 2Spread one side with mustard.

Step 3Prepare stuffing.

Step 4Heat oil in frying pan.

Step 5Add onion, cook 3 minutes until lightly browned.

Step 6Add mushrooms; cook 5 minutes.

Step 7Stir in parsley, chives, tomato paste and bread crumbs.

Step 8Season with salt, pepper and paprika.

Step 9Spread stuffing on mustard side of steak.

Step 10Roll up jelly roll fashion and tie with thread or string.

Step 11Prepare gravy.

Step 12Cook bacon in dutch oven or heavy casserole until partially done.

Step 13Add meat roll; brown on all sides, approximately 10 minutes.

Step 14Add onions; saute 5 minutes.

Step 15Pour in beef broth; cover dutch oven.

Step 16Simmer 1 hour.

Step 17Remove meat to preheated platter.

Step 18Season pan juices with mustard.

Step 19Salt and pepper to taste, stir in ketchup.
