beef flank steak with mushroom stuffing

Ingredients

  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 pounds flank steak
  • 1 teaspoon dijon mustard
  • STUFFING INGREDIENTS
  • 2 tablespoons vegetable oil
  • 1 small chopped onion
  • 4 ounces mushrooms, sliced and drained
  • 1/4 cup chopped parsley
  • 2 tablespoons chopped chives or scallions
  • 1 tablespoon tomato paste
  • 1/4 cup bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon paprika
  • GRAVY INGREDIENTS
  • 3 slices bacon, chopped
  • 2 small onions, finely chopped
  • 1 cup beef broth, hot
  • 1 teaspoon dijon mustard
  • 2 tablespoons ketchup

How To Make beef flank steak with mushroom stuffing

  • Step 1
    Lightly salt and pepper steak on both sides.
  • Step 2
    Spread one side with mustard.
  • Step 3
    Prepare stuffing.
  • Step 4
    Heat oil in frying pan.
  • Step 5
    Add onion, cook 3 minutes until lightly browned.
  • Step 6
    Add mushrooms; cook 5 minutes.
  • Step 7
    Stir in parsley, chives, tomato paste and bread crumbs.
  • Step 8
    Season with salt, pepper and paprika.
  • Step 9
    Spread stuffing on mustard side of steak.
  • Step 10
    Roll up jelly roll fashion and tie with thread or string.
  • Step 11
    Prepare gravy.
  • Step 12
    Cook bacon in dutch oven or heavy casserole until partially done.
  • Step 13
    Add meat roll; brown on all sides, approximately 10 minutes.
  • Step 14
    Add onions; saute 5 minutes.
  • Step 15
    Pour in beef broth; cover dutch oven.
  • Step 16
    Simmer 1 hour.
  • Step 17
    Remove meat to preheated platter.
  • Step 18
    Season pan juices with mustard.
  • Step 19
    Salt and pepper to taste, stir in ketchup.
