Crockpot Beef Fajitas

This is one tasty and spicy version of slow cooked beef fajitas. The recipe belonged to a dear friend of mine, Marilyn Vega.

She was sweet, kind and gentle spirited. I consider it an honor that I knew her. She was so soft spoken but one thing she did speak about was her family and especially her Mom. She loved her Mexican heritage and enjoyed cooking along with selling Avon. :-)
A beautiful young lady who even in her struggles with health problems was always taking care of her family and her Mother.
Truly, it is one of the qualities I admire most in the Mexican families and friends that I have is that they are very tight knit and always doing for one another with a high respect for their loved ones.

I hope you enjoy these incredible fajitas. They are so tasty and a little on the spicy side with the jalapenos in the mix. Delish!

Slow Cooker Crock Pot

1 1/2 lb
beef flank steak
1 c
chopped onion
1 large
green sweet pepper, cut into 1/2-inch pieces
1 medium
jalapeno pepper, chopped
1 Tbsp
cilantro, dried
cloves garlic, minced
1 tsp
chili powder
1 tsp
ground cumin
1 tsp
ground coriander
1/2 tsp
1 can(s)
(8-10 oz) chopped tomatoes
(8-inch) flour tortillas


fresh chopped cilantro
sour cream
shredded cheese

How to Make Crockpot Beef Fajitas


  • 1Prepare to add all ingredients to crockpot.
  • 2Cut flank steak into 6 portions. In any size crockpot, combine meat, onion, green sweet pepper, jalapeno pepper, cilantro, garlic, chili powder, cumin coriander and salt.

    (I had the butcher cut the flank into thin strips for fajitas. If you have it cut in strips they will be done in 4-6 hrs on low. Any longer and it breaks the meat apart.)
  • 3Add tomatoes.
  • 4Cover, cook on low for 8-10 hours or on high for 4-5 hours. Remove meat from crockpot and shred. Return meat to crockpot and stir.
  • 5To serve fajitas, spread mixture into flour tortillas and top with the above mentioned toppings, if desired. Roll up tortillas.
  • 65-20-13 Made these for our Girl's Night In get together that I have once a month. This is Cinco de Mayo celebration night, so I thought fajitas would be perfect to serve.
