flour tortillas
4 clove
garlic, minced
1 medium
onion, thinly sliced
2
red or green bell peppers, sliced
2 Tbsp
canola oil
1 lb
beef stir-fry or fajita
1 large
jalapeno, seeded, minced
1 Tbsp
chili powder
1/2 Tbsp
paprika
1/2 Tbsp
oregano, dried
1 tsp
salt
1/2 tsp
cumin
1 Tbsp
lime juice
plain yogurt
1 pkg
4-cheese shred

How to Make Beef Fajitas

Step-by-Step

  • 1In a large skillet, heat 1 tbsp oil over med heat.
  • 2Cook garlic, onion, bell peppers and jalapeno until the onion is translucent and peppers are crisp-tender (I sometimes steam them to get them to cook faster); remove from pan.
  • 3Add the remaining oil; brown the beef for 2 minutes. Stir in herbs, spices and lime juice.
  • 4Return vegetables to the skillet, heat through and serve in tortillas with yogurt and cheese.
