  • 8 medium
    flour tortillas
  • 4 clove
    garlic, minced
  • 1 medium
    onion, thinly sliced
  • 2
    red or green bell peppers, sliced
  • 2 Tbsp
    canola oil
  • 1 lb
    beef stir-fry or fajita
  • 1 large
    jalapeno, seeded, minced
  • 1 Tbsp
    chili powder
  • 1/2 Tbsp
  • 1/2 Tbsp
    oregano, dried
  • 1 tsp
  • 1/2 tsp
  • 1 Tbsp
    lime juice
  • ·
    plain yogurt
  • 1 pkg
    4-cheese shred

How to Make Beef Fajitas


  1. In a large skillet, heat 1 tbsp oil over med heat.
  2. Cook garlic, onion, bell peppers and jalapeno until the onion is translucent and peppers are crisp-tender (I sometimes steam them to get them to cook faster); remove from pan.
  3. Add the remaining oil; brown the beef for 2 minutes. Stir in herbs, spices and lime juice.
  4. Return vegetables to the skillet, heat through and serve in tortillas with yogurt and cheese.
