Ingredients
- 8 medium flour tortillas
- 4 cloves garlic, minced
- 1 medium onion, thinly sliced
- 2 - red or green bell peppers, sliced
- 2 tablespoons canola oil
- 1 pound beef stir-fry or fajita
- 1 large jalapeno, seeded, minced
- 1 tablespoon chili powder
- 1/2 tablespoon paprika
- 1/2 tablespoon oregano, dried
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1 tablespoon lime juice
- - plain yogurt
- 1 package 4-cheese shred
How To Make beef fajitas

Step 1In a large skillet, heat 1 tbsp oil over med heat.

Step 2Cook garlic, onion, bell peppers and jalapeno until the onion is translucent and peppers are crisp-tender (I sometimes steam them to get them to cook faster); remove from pan.

Step 3Add the remaining oil; brown the beef for 2 minutes. Stir in herbs, spices and lime juice.

Step 4Return vegetables to the skillet, heat through and serve in tortillas with yogurt and cheese.
