red beans and rice mix

black olives, sliced (4oz)
1 can(s)
green chilies, drained (4oz)
1 lb
beef, ground
14 1/2 oz
tomatoes, diced
2 c
monterrey jack cheese, shredded
2 c
colby jack cheese, shredded
1 c
tortilla chips, crushed

How to Make Beef Fajita Casserole


  • 1Brown ground beef and drain grease away.
  • 2Prepare rice mix according to package instructions.
  • 3When rice is done, add the olives, chilies and tomatoes and mix in the ground beef.
  • 4Add chili powder and cajun seasonings to taste.
  • 5Pour in casserole dish and sprinkle cheese and chips on top.
  • 6Place in oven at about 325 degrees for long enough to melt the cheese.
  • 7Serve.
