Ingredients
- 1 package red beans and rice mix
- 1 can black olives, sliced (4oz)
- 1 can green chilies, drained (4oz)
- 1 pound beef, ground
- 14 1/2 ounces tomatoes, diced
- 2 cups monterrey jack cheese, shredded
- 2 cups colby jack cheese, shredded
- 1 cup tortilla chips, crushed
How To Make beef fajita casserole

Step 1Brown ground beef and drain grease away.

Step 2Prepare rice mix according to package instructions.

Step 3When rice is done, add the olives, chilies and tomatoes and mix in the ground beef.

Step 4Add chili powder and cajun seasonings to taste.

Step 5Pour in casserole dish and sprinkle cheese and chips on top.

Step 6Place in oven at about 325 degrees for long enough to melt the cheese.

Step 7Serve.
