1beef skirt steak

1 mediumonion, sliced

MARINADE

1 cpineapple juice

1/2 csoy sauce

4fresh squeezed limes
-
1/4 cfresh cilantro, chopped

1jalepeno - seeded and chopped small

1/3 conions
-
1/3 cwater
-
·cumin, salt, pepper to taste

QUESO BLANCO- EXTRA CAN BE USED FOR DIP

1 1/2 lbblock white american cheese, cut into 1 inch cubes
-
1 ozpickled jalapeno juice
-
2/3 cwhole milk
-
1/2 ccold water
How to Make Beef Fajita Burrito with Queso Blanco
- Combine all marinade ingredients with skirt steak into a zip lock bag. Marinate no more than 4 hours. You still want to taste the beef!
- Prepare queso in crock pot. Put all ingredients together in crock pot for 30 minutes to 1 hour on low. Stir often.
- Sautee onions and peppers with some salt and pepper in oil until browned and carmelized.
- Grill marinated steak on med- hot grill until desired doneness. (I like med rare-med)Take off grill and let sit for about 10 mins. Slice into thin strips.
- Assemble steak, onion, peppers into tortillas in burrito fashion. Drizzle as much warm queso as you like on top and serve.
