beef essentials: garlic butter steak bites
Okay, here is the deal. I do not usually post recipes without images. When I made these, I did not intend to post it, so the only image I have is the final product. Several folks have asked me to post it because they can then save it into their recipe file, and one day in the future, I will update it with photos. With that said, these are excellent steak bites, just the correct amount of spices, a nice crispy exterior, and tender. They are easy/peasy to make, and the whole process takes about 30 minutes from pan to table. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 pound steak, cut up into bite-size pieces
- STEAK SPICES
- 1 tablespoon black pepper, freshly ground
- 1 teaspoon salt, Kosher variety, fine grind
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- GARLIC BUTTER SAUCE
- 4 tablespoons sweet butter, unsalted
- 3 - 4 cloves garlic, minced
- 2 - 3 medium shallots, finely chopped
- 1 - 2 sprigs fresh rosemary, or thyme
- 1 tablespoon Worchestershire sauce

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Cut the meat into bite-sized pieces, and then pat them dry with a paper towel.

Step 4Patting them dry will help them to sear and crisp in the hot pan. If they are too wet, they will just steam.

Step 5Drizzle the steak with a bit of olive oil, and mix until nicely coated.

Step 6Sprinkle the spice mixture onto the beef, and mix until evenly coated.

Step 7Place your pan over high heat, and add about 2 tablespoons of olive oil.

Step 8If the pan begins to smoke, turn down the heat a bit. We want a hot pan, but little to no smoke.

Step 9Add the beef, and give them a bit of space. If they are too close together, they will steam, not sear.

Step 10You might need to do the searing in batches.

Step 11Let them cook, undisturbed, for about a minute or two, and then flip them over.

Step 12A pair of tongs is a good tool to use for flipping.

Step 13Let them cook, undisturbed, for another minute or two.

Step 14The reason we leave it undisturbed is that it gives the beef a chance to build a crust. If you move them around, that will not happen.

Step 15Remove the seared steak from the pan.

Step 16Reduce pan heat to medium.

Step 17Add the butter, and allow to melt.

Step 18Add the garlic, shallots, and fresh thyme or rosemary.

Step 19Stir for about 60 seconds.

Step 20Add the Worcestershire sauce and stir for about 30 seconds.

Step 21Return the beef to the pan, and stir until coated in the sauce.

Step 23Put the beef on a plate or in a bowl, and drizzle with the remaining garlic/butter sauce. Enjoy.
