beef essentials: flat iron steak
Flat Iron steaks are a great cut of beef, and come out tender… If cooked the correct way. And the “correct” way is hot and fast. This recipe uses a marinade to give it some Asian flavors, and the quick cooking method makes it flavorful and tender. Once it comes out of the marinade, it can be on the table in about 15 quick minutes. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 - 1 1/2 pounds flat iron steak
- 1 - 2 tablespoons grapeseed, or other high heat oil
- THE MARINADE
- 1/2 cup Tamari sauce or liquid aminos
- 1/2 cup clover honey or coconut sugar
- 2 tablespoons toasted sesame oil
- 1 tablespoon rice vinegar

Step 2The Steak The best way to cook a flat iron steak is on a hot grill or in a hot cast iron pan. This cut of beef is well-marbled, and hot and fast is the way to go. Another thing is using a marinade to enhance the already flavorful beef.

Step 3Additions To kick it up a bit, add a tablespoon or two of butter to the pan about a minute of cooking, then add a bit of minced garlic and maybe a sprig or two of thyme, then baste the steak as it cooks. Total yummy.

Step 4Gather your Ingredients (mise en place).

Step 5Whisk the marinade ingredients together.

Step 6Add the steak. Then place into the fridge and allow to marinate for 4 – 6 hours.

Step 7You can use a Ziploc bag, as I did, or you can put it into a covered bowl.

Step 8Do not exceed the six-hour limit on the marinade. If you go beyond the limit, the steak will begin to get mushy, and we HATE it when that happens.

Step 9After marinating, remove the steak from the fridge, and allow to sit 30 minutes before cooking. This will ensure the steak cooks evenly and is not raw in the middle.

Step 10If you are using a grill, get it up to hot, hot. If you are using a cast-iron pan, put it over high heat.

Step 11Pat the steak dry with a paper towel, add the oil to the pan (or brush the grill grates with the oil), and then add the steak.

Step 12For medium rare cook about 3 – 4 minutes per side. For medium cook about 5 – 6 minutes per side. While the steak is cooking, do not move it, just let it sit there. Use a pair of tongs to flip it during the cooking process.

Step 13Allow the steak to rest for about 5 minutes before slicing. Then slice the steak against the grain into thin strips.

Step 15Serve with, noodles or rice, cooked vegetables, or with slaw, or on a salad. Enjoy.
