beef enchiladas
This is my youngest grandson's favorite thing that I make. I am having his 18th birthday dinner Sunday, so I will be baking a lot of these, along with Mexican Rice, Refried Beans and Chicken Enchiladas and a six layer chocolate cake. Oh my. I'll probably have to eat a salad..So sad.

Ingredients
- 2 pounds 93% ground beef
- 2 cans taco sauce, mild
- 1 can red enchilada sauce
- 1 can diced green chilis, drained
- 1 package mexican blend shredded cheese
- 1 medium onion, diced
- 1 package flour tortillas (12)
How To Make beef enchiladas

Step 1Brown ground beef in skillet and drain grease. Add taco sauce, enchilada sauce and green chiles; let simmer for ten minutes. In a 9x13 in" baking pan, put a layer of the ground beef mixture in the bottom. Put a couple of heaping tablespoons of mixture inside each tortilla. On top of tortillas, put a layer of cheese and onion. Bake in oven at 425 degrees until cheese melts, about ten minutes.
