beef enchiladas

I have tried many different recipes for beef enchiladas...And this one is the one. I have made a few changes to it. So Yummy with a little kick.

Ingredients
- 1 pound lean ground beef
- 1/2 package mccormicks taco seasoning
- 1/2 cup finely chopped onion (if you don't like raw onions,you can cook them with the meat)
- 2 cups cheddar cheese, shredded
- 1 can red enchilada sauce (mild)
- 1 can green enchilada sauce
- 1 can ro-tel tomatoes (original) pureed in blender
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 package corn or flour tortillas (i use corn)
How To Make beef enchiladas

Step 1Brown ground beef. Add taco seasoning and mix well. In a medium saucepan mix together both enchilada sauces, both soups and pureed ro-tel. Mix thoroughly and heat until hot, but not boiling.

Step 2Heat tortillas in a skillet sprayed with cooking spray for 10 sec. on each side. Put 1 tablespoon of meat, a sprinkle of cheese, and a few chopped onions on each tortilla. Roll up and place seam side down in a greased 9x13 baking pan. Continue till all the meat is gone.

Step 3Pour heated sauce over all the enchiladas. Sprinkle with grated cheese. Bake at 350 for 20 miniutes.
