Ingredients
- 1 pound ground beef, browned
- 1 - minced onion
- 2 cans chili pepper, diced
- 1 - clove garlic, minced
- 2 pints tomato sauce
- 1/2 teaspoon salt
- 1 - egg, beaten
- 1/2 pound cheddar cheese, grated
- 12 - tortillas
- - olive oil
- 1 can enchilada sauce
- 2 tablespoons oil
How To Make beef enchiladas

Step 1Heat 1/2 inch of oil in skillet and fry tortillas about 15 seconds each side; remove and pat off excess oil.

Step 2In separate skillet heat 2 tablespoons oil and saute onion until tender.

Step 3Add chili peppers, garlic, tomato sauce, salt and pepper.

Step 4Add ground beef.

Step 5Simmer uncovered 10 minutes.

Step 6Dip tortillas in egg, fill with sauce mixture, roll and place in shallow greased baking dish.

Step 7Pour red sauce over tortillas, top with grated cheese and bake uncovered at 350 for 15 minutes.
