This is a favorite in my family. You can make it with chicken and add any seasoning that sounds good to you. The enchilada shells tend to get mushy but it's really yummy! My husband and even my 1 1/2 year old daughter love it! Hope you enjoy it as well!

Ingredients
- 2 pounds ground beef
- 2 cans cheddar cheese soup
- 1 large can refried beans
- 1 small can enchilada sauce
- - taco seasoning
- - cumin
- - smoked paprika
- - salt and pepper
- 1 large can enchilada sauce
- 1 package whole wheat tortillas
- - shredded cheese
- - sour cream
How To Make beef enchiladas

Step 1Cook Ground Beef and Drain. Add taco seasoning and spices

Step 2Mix in refried beans, small can of enchilada sauce, and cheddar cheese soup

Step 3Fill up tortilla shells and place in 9x13 baking dish. Take leftover mixture and spoon over tortillas

Step 4Cover with large can on enchilda sauce and shredded cheese. Bake in 350 oven for 45 minutes to an hour or until heated through and cheese is melted. Top with sour cream and enjoy!
