Ingredients
- 10 - flour tortillas (the softshell taco size)
- 2 pounds ground beef
- - taco seasoning (to taste)
- 1 teaspoon minced garlic
- 3 cans (10 oz each) enchilada sauce, mild
- 1 cup chopped onion, divided
- 2 cans (4.5 oz each) chopped green chiles, divided
- 2 1/2 cups mexican blend shredded cheese, divided
How To Make beef enchiladas

Step 1Spray a 12x18 pan with cooking spray. (if you don't have that large of a pan, I've split them between two pans, using a normal cake pan, and a 8x8 pan)

Step 2Brown ground beef with taco seasoning and garlic, drain. Put in fridge to cool slightly (so the shredded cheese doesn't melt when adding ingredients together)

Step 3In a large bowl, stir together cooked ground beef, 2 cans enchilada sauce, 3/4 cup onion, 1 1/2 cans of the chopped green chiles, and 1 1/2 cups of cheese.

Step 4One at a time, arrange hamburger on the tortilla slightly off-center. Roll the tortilla and put in the pan, seam side down.

Step 5Once all enchiladas are rolled, pour the remaining can of enchilada sauce over tortillas, and top with remaining cheese, onion, and green chiles.

Step 6Bake at 375 for 20 minutes. Let sit for a few minutes before serving. Top with sour cream, if desired.
