Ingredients

  • 1 lb
    ground sirloin
  • 1/8 tsp
    garlic powder
  • 1/2
    onion, chopped
  • 1/4 tsp
    chili powder
  • 1 1/2 c
    kidney beans, cooked
  • 1 1/2 c
    pinto beans rinsed and drained
  • 1 can(s)
    green chiles, diced and drained
  • 1/2 c
    cream of mushroom soup
  • 1 can(s)
    stewed tomatoes
  • 6
    mexican style corn tortillas
  • ·
    cooking spray
  • 6 oz
    cheddar cheese, shredded

How to Make Beef Enchilada Pie

Step-by-Step

  1. Cook ground beef, garlic, onion and chili powder in frying pan over medium heat until browned.
  2. Add beans and chiles.
  3. Preheat oven to 350.
  4. Mix 1/2 cup of soup (DO NOT ADD WATER) with stewed tomatoes.
  5. Layer on the bottom of an 8 to 9" square baking pan coated with non-stick spray.
  6. Top with half the tomato mixture, half the meat/bean mixture and half the cheese.
  7. Repeat with a layer of tortillas, meat, sauce and cheese.
  8. Cover loosely with foil and bake for 45 minutes.
