Ingredients

  • 1 pound ground sirloin
  • 1/8 teaspoon garlic powder
  • 1/2 - onion, chopped
  • 1/4 teaspoon chili powder
  • 1 1/2 cups kidney beans, cooked
  • 1 1/2 cups pinto beans rinsed and drained
  • 1 can green chiles, diced and drained
  • 1/2 cup cream of mushroom soup
  • 1 can stewed tomatoes
  • 6 - mexican style corn tortillas
  • - cooking spray
  • 6 ounces cheddar cheese, shredded

How To Make beef enchilada pie

  • Step 1
    Cook ground beef, garlic, onion and chili powder in frying pan over medium heat until browned.
  • Step 2
    Add beans and chiles.
  • Step 3
    Preheat oven to 350.
  • Step 4
    Mix 1/2 cup of soup (DO NOT ADD WATER) with stewed tomatoes.
  • Step 5
    Layer on the bottom of an 8 to 9\" square baking pan coated with non-stick spray.
  • Step 6
    Top with half the tomato mixture, half the meat/bean mixture and half the cheese.
  • Step 7
    Repeat with a layer of tortillas, meat, sauce and cheese.
  • Step 8
    Cover loosely with foil and bake for 45 minutes.
