Ingredients

  • 3 pounds boneless pot roast, cut into 1/2 inch slices
  • 2 tablespoons oil
  • 6 - tomatoes, peeled and quartered
  • 4 ounces sliced mushrooms with juice
  • 1/2 cup black olives, pitted and drained
  • 1 - garlic clove, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon basil
  • 1 - bay leaf

How To Make beef arlesienne

  • Step 1
    Heat oil in dutch oven or electric frying pan.
  • Step 2
    Add meat and brown well on both sides.
  • Step 3
    Pour off fat and add the rest of the ingredients to the pan.
  • Step 4
    Cover tightly and simmer 2 1/2 to 3 hours.
  • Step 5
    Serves: 6
