Ingredients

  • 3 lb
    boneless pot roast, cut into 1/2 inch slices
  • 2 Tbsp
    oil
  • 6
    tomatoes, peeled and quartered
  • 4 oz
    sliced mushrooms with juice
  • 1/2 c
    black olives, pitted and drained
  • 1
    garlic clove, crushed
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/4 tsp
    basil
  • 1
    bay leaf

How to Make Beef Arlesienne

Step-by-Step

  1. Heat oil in dutch oven or electric frying pan.
  2. Add meat and brown well on both sides.
  3. Pour off fat and add the rest of the ingredients to the pan.
  4. Cover tightly and simmer 2 1/2 to 3 hours.
  5. Serves: 6
