beef and rice mexican dinner
I make up Mexican recipes all the time with leftover ingredients. I love to make things in a skillet because it’s easier for me. I do not want to heat my whole kitchen using an oven. A big skillet works better for me. This recipe was made with leftover taco meat. It was enough to make this entire meal because of the rice and other ingredients that were added. It’s a simple skillet recipe. It’s a very tasty taco dish with ingredients. You probably have them on hand. I hope you enjoy this weeknight meal. Also, you can add in a can of corn if you'd like.

Ingredients
- 1 pound ground beef
- 1 package taco seasoning mix
- water per taco seasoning package
- 1 medium yellow onion, diced
- 1 can black beans, rinsed. and drained (15 oz)
- 1 can Rotel, do not drain
- 1 1/2 cups jasmine rice, no need to rinse
- 2 cups beef stock or beef broth
- 1 tablespoon sweet paprika
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 2 cups shredded Mexican style cheese
- - chopped green onions, garnish
- sour cream, garnish
How To Make beef and rice mexican dinner

Step 1In a nonstick skillet on medium heat, brown up ground beef.

Step 2After the ground beef is no longer pink, add taco packet seasoning and water according to the package ingredients.

Step 3Add in all other ingredients except for the beef broth.

Step 4Stir everything together on medium heat until well combined and coated. Put a lid on the skillet.

Step 5Once the broth has soaked up into the rice and is cooked thoroughly through, remove from heat. Take off the lid and sprinkle on the cheese.

Step 6Replace the lid on the residual heat will melt the cheese.

Step 7Top portions with sour cream and green onion. Serve and enjoy.
