    extra lean ground beef
  • 2 Tbsp
    olive oil, extra virgin
  • 1 c
    coarsely chopped onion
  • 1 c
    thinly sliced celery
  • 1/2 c
    minced jalapeno or mild peppers
  • 2 clove
    garlic,finely minced
  • 1 can(s)
    14.5 oz diced tomatoes,undrained
  • 1 can(s)
    12-15oz corn , drained
  • 1 medium
    green pepper,chopped
  • 1 tsp
    chili powder
  • 1/2 tsp
  • dash(es)
    black pepper
  • 4 medium
    potatoes,peeled,thinly sliced,uncooked
  • 2 c
    shredded sharp cheddar cheese
  • 1/2 tsp
    ground cumin

How to Make Beef and Potato Bake


  1. Grease a 13*9*2 baking dish. Heat oven to 350*
    In a large skillet,heat the olive oil over med, heat.Add the ground beef,celery and cook stirring till beef is browned and vegetables are tender. Add garlic and peppers, cook, for about 1min. Stir in tomatoes,chili powder,salt,pepper,and cumin.
  2. In the prepared bakind dish, arrange half of the sliced potatoes,then top with half of the corn and green pepper and ground beef mixture and half of the cheese.Repeat the layers,ending with the remaining cheese. Cover tightly with foil and bake for about 1 hr and 30mins.
