beef and potato bake

Usually everyone will have all of these ingredients in the kitchen,we are all looking for healthy and low-fat so here it is.

Ingredients

  • 1 pound extra lean ground beef
  • 2 tablespoons olive oil, extra virgin
  • 1 cup coarsely chopped onion
  • 1 cup thinly sliced celery
  • 1/2 cup minced jalapeno or mild peppers
  • 2 cloves garlic,finely minced
  • 1 can 14.5 oz diced tomatoes,undrained
  • 1 can 12-15oz corn , drained
  • 1 medium green pepper,chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • dash black pepper
  • 4 medium potatoes,peeled,thinly sliced,uncooked
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon ground cumin

How To Make beef and potato bake

  • Step 1
    Grease a 13*9*2 baking dish. Heat oven to 350* In a large skillet,heat the olive oil over med, heat.Add the ground beef,celery and cook stirring till beef is browned and vegetables are tender. Add garlic and peppers, cook, for about 1min. Stir in tomatoes,chili powder,salt,pepper,and cumin.
  • Step 2
    In the prepared bakind dish, arrange half of the sliced potatoes,then top with half of the corn and green pepper and ground beef mixture and half of the cheese.Repeat the layers,ending with the remaining cheese. Cover tightly with foil and bake for about 1 hr and 30mins.
