This is a classic Irish dish that gets its flavorful kick from the Irish beer, Guinness. It is an excellent one-pot meal just in time for St. Patrick's Day!

Ingredients

  • 3 slice
    raw bacon, chopped
  • 1 Tbsp
    vegetable oil
  • 2 lb
    beef stew meat
  • 1 1/2 c
    guinness beer (do not sub)
  • 3 c
    beef stock
  • 2 clove
    garlic, minced
  • 1/2 tsp
    salt
  • 1/2 tsp
    black pepper
  • 12 oz
    baby carrots
  • 4
    celery stalks, sliced into 1/2 inch chunks
  • 1 large
    onion, peeled and cut into chunks
  • 1 - 2 Tbsp
    flour
  • 1/3 c
    water

How to Make Beef and Guinness Casserole - Steph

Step-by-Step

  1. Place bacon in heavy soup pot or Dutch oven and cook over high heat until crisp. Stir in vegetable oil and stew meat. Continue cooking for 8 - 10 minutes, or until meat is browned.
  2. Stir in beer, beef stock, garlic, salt, and pepper; reduce heat to low, and simmer, covered, for 30 minutes. Add carrots, celery, and onions. Stir well, and cook for one hour or until meat is tender.
  3. Mix flour with water and stir into stew. Cook 1 - 2 minutes, or until sauce is thickened. ENJOY!!
