This is a classic Irish dish that gets its flavorful kick from the Irish beer, Guinness. It is an excellent one-pot meal just in time for St. Patrick's Day!

Ingredients

raw bacon, chopped
1 Tbsp
vegetable oil
2 lb
beef stew meat
1 1/2 c
guinness beer (do not sub)
3 c
beef stock
2 clove
garlic, minced
1/2 tsp
salt
1/2 tsp
black pepper
12 oz
baby carrots
4
celery stalks, sliced into 1/2 inch chunks
1 large
onion, peeled and cut into chunks
1 - 2 Tbsp
flour
1/3 c
water

How to Make Beef and Guinness Casserole - Steph

Step-by-Step

  • 1Place bacon in heavy soup pot or Dutch oven and cook over high heat until crisp. Stir in vegetable oil and stew meat. Continue cooking for 8 - 10 minutes, or until meat is browned.
  • 2Stir in beer, beef stock, garlic, salt, and pepper; reduce heat to low, and simmer, covered, for 30 minutes. Add carrots, celery, and onions. Stir well, and cook for one hour or until meat is tender.
  • 3Mix flour with water and stir into stew. Cook 1 - 2 minutes, or until sauce is thickened. ENJOY!!
