Ingredients

  • 4 oz
    ground beef
  • 4
    green onions, diced
  • 1
    garlic clove, minced
  • 1/2 c
    salsa
  • 1/2 c
    cottage cheese
  • 1 tsp
    cornstarch
  • 1/4 tsp
    dried oregano
  • 2
    flour tortillas
  • 1/4 c
    mozzarella cheese, shredded

How to Make Beef and Cheese Burritos

Step-by-Step

  1. Cook ground beef, onions and garlic in a small saucepan until beef is no longer pink and onion is tender.
  2. Drain off fat.
  3. Combine 2 tablespoons of the salsa, cottage cheese, cornstarch and oregano.
  4. Add to meat mixture in saucepan.
  5. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more.
  6. Divide meat mixture between tortillas; roll up.
  7. Top with remaining salsa.
  8. Cover and keep warm.
