Ingredients

  • 4 ounces ground beef
  • 4 - green onions, diced
  • 1 - garlic clove, minced
  • 1/2 cup salsa
  • 1/2 cup cottage cheese
  • 1 teaspoon cornstarch
  • 1/4 teaspoon dried oregano
  • 2 - flour tortillas
  • 1/4 cup mozzarella cheese, shredded

How To Make beef and cheese burritos

  • Step 1
    Cook ground beef, onions and garlic in a small saucepan until beef is no longer pink and onion is tender.
  • Step 2
    Drain off fat.
  • Step 3
    Combine 2 tablespoons of the salsa, cottage cheese, cornstarch and oregano.
  • Step 4
    Add to meat mixture in saucepan.
  • Step 5
    Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more.
  • Step 6
    Divide meat mixture between tortillas; roll up.
  • Step 7
    Top with remaining salsa.
  • Step 8
    Cover and keep warm.
