  • 1 lb
    ground beef
  • 1/2 c
    green bell pepper, diced
  • 1/2 c
    onion, finely chopped
  • 1
    garlic clove, minced
  • 2.5 c
    water
  • 16 oz
    canned tomatoes, undrained and chopped
  • 6 oz
    tomato paste
  • 3/4 c
    medium barley
  • 1 Tbsp
    sugar
  • 1/2 tsp
    salt

How to Make Beef And Barley Dinner

Step-by-Step

  1. In a 4-quart saucepan or dutch oven, brown ground beef.
  2. Add green pepper, onion and garlic.
  3. Cook until onion is tender; drain.
  4. Add remaining ingredients.
  5. Bring to a boil.
  6. Reduce heat to low; cover.
  7. Simmer 45 to 50 minutes or until barley is tender, stirring occasionally.
  8. NOTE: To use quick barley, substitute 1 cup quick barley for medium barley. Prepare recipe as directed above except simmer 15 to 20 minutes or until barley is tender, stirring occasionally.
