Ingredients

  • 1 pound ground beef
  • 1/2 cup green bell pepper, diced
  • 1/2 cup onion, finely chopped
  • 1 - garlic clove, minced
  • 2.5 cups water
  • 16 ounces canned tomatoes, undrained and chopped
  • 6 ounces tomato paste
  • 3/4 cup medium barley
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

How To Make beef and barley dinner

  • Step 1
    In a 4-quart saucepan or dutch oven, brown ground beef.
  • Step 2
    Add green pepper, onion and garlic.
  • Step 3
    Cook until onion is tender; drain.
  • Step 4
    Add remaining ingredients.
  • Step 5
    Bring to a boil.
  • Step 6
    Reduce heat to low; cover.
  • Step 7
    Simmer 45 to 50 minutes or until barley is tender, stirring occasionally.
  • Step 8
    NOTE: To use quick barley, substitute 1 cup quick barley for medium barley. Prepare recipe as directed above except simmer 15 to 20 minutes or until barley is tender, stirring occasionally.
