bbq cheeseburger & potato meatloaf

This meatloaf was an experiment today. I was in a play in the kitchen kind of mood. Adding potatoes and cheese to meatloaf was new to me. This turned out to be a very moist and tasty meatloaf. Leftovers were put in a ziploc bag and refrigerated for meatloaf sammies later in the week. Hope you enjoy!

Ingredients

  • MEATLOAF
  • 1 1/2 pounds ground beef
  • 1 1/2 cups panko bread crumbs ( i used plain but i think seasoned would be great)
  • 2 large eggs
  • 1/2 cup sweet baby rays original bbq sauce
  • 1/2 large onion, chopped
  • 7 or 8 ounces diced cooked potatoes (i used 1/2 of a 15-ounce canned diced potatoes, drained)
  • 4 ounces cheese, shredded, i used marble jack
  • 2 teaspoons italian seasoning
  • - salt and pepper, to taste
  • SAUCE FOR TOP OF MEATLOAF
  • 1/4 cup sweet baby rays original bbq sauce
  • 1/4 cup ketsup
  • 1 tablespoon worcestershire sauce
  • 2 to 4 dashes louisanna hot sauce
  • - salt to taste
  • - cayenne pepper to taste

How To Make bbq cheeseburger & potato meatloaf

  • Step 1
    Preheat oven to 350 degrees. Spray a baking dish with PAM.
  • Step 2
    In a large bowl; combine all Meatloaf ingredients together; mix well. Form into a loaf. Place in prepared baking dish.
  • Step 3
    Bake for 1 hour and 15 minutes. (Sauce to be added the last 15 minutes of cooking time)
  • Step 4
    Whisk togther the sauce ingredients. After meatloaf has baked for 1 hour, remove from oven; spread sauce evenly over the top; return to oven for last 15 minutes of baking.
  • Step 5
    Serve with your favorite veggies. And make meatloaf sammies out of leftovers. Enjoy!
