My fiancee' doesn't like sweets and baked goods, so for his birthday, I came up with these fake cupecakes!

yield 4-8 depending on portion

Ingredients

  • 1 pound ground beef
  • 1 can refrigerated biscuits
  • 1/2 cup bbq sauce (i use sweet baby rays)
  • 1 1/2 cups mashed potatoes
  • 1 small onion, chopped
  • 1/4 cup cheddar cheese, shredded

How To Make bbq beefcakes

  • Step 1
    If making mashed potatoes from scratch, do that first. Keep warm
  • Step 2
    in Med skillet, soften the onion over med-low heat, til translucent
  • Step 3
    raise heat, add ground beef to pan, cook til brown, no longer pink
  • Step 4
    while meat is cooking, preheat oven to 350, spray muffin pan with cooking spray
  • Step 5
    flatten biscuits with rolling pin, til large enough to fit in muffin pan, about 4in round, press into muffin pan
  • Step 6
    Once beef is cooked, drain off fat. Return to heat, add BBQ Sauce, mix, heat thru
  • Step 7
    scoop beef mix into prepped muffin pan, gently mounding meat into center of dough, bake for 10 Min
  • Step 8
    carefully load mashed potatoes into piping bag with large round or star tip. Pipe potatoes on and around half baked beef cakes as you would frost a cupcake. Bake 10 min
  • Step 9
    gently sprinkle cheese over each BeefCake, return to oven til cheese is starting to melt, but not loose its shape (2 min?)
  • Step 10
    Serves 4 adults (2 cakes each) or up to 8 kids
