basic meatloaf

I start with this then change it up. Sometimes I add green pepper, sometimes I use rotel instead of the tomato sauce and add some sliced jalepenos. I've put in mushrooms and used onion soup mix. I've used my grandma's homemade catsup instead of the sauce too. It's just a good basic recipe to start from. I think I found it in a magazine years ago.

Ingredients

  • 2-3 pounds ground beef
  • 1/2 cup rolled oats
  • 1/2 cup fine dry breadcrumbs
  • 1 can tomato sauce (8 oz)
  • 1 tablespoon steak seasoning
  • 1 teaspoon chopped garlic
  • 1 small onion, chopped fine
  • 2 - eggs, beaten
  • - ketchup & brown sugar

How To Make basic meatloaf

  • Step 1
    Mix everything (except ketchup & brown sugar)together using your hands till well combined. Press into a 9x13 pan (I usually use a pyrex dish). Bake at 350 till meat in middle is no longer pink. Sorry I'm not good with time.
  • Step 2
    Take the loaf out of the oven and drain the excess grease off. Afterwards drizzle or smear the top with ketchup and sprinkle lightly with brown sugar. Return to oven to kind of let ketchup condense and sugar melt.
  • Step 3
    I usually let this sit for about 10 minutes before I slice it. It has always held together well for me. Other recipes have given me problems in the past with crumbling.
