Fat and bone both conduct the heat and therefore the meat nearest the bone will cook first. Well marbled meat will have a better distribution of heat and cook more evenly than lean meat.

Ingredients

  • 1 3/4 to 2 pounds baby beef ribs
  • 1 - onion, sliced
  • BASTING SAUCE
  • 3 tablespoons oil
  • 3 tablespoons chili sauce
  • 2 tablespoons lemon juice
  • 1 dash black pepper
  • 1 dash dry mustard

How To Make barbecued baby beef ribs (microwave version)

  • Step 1
    Wipe ribs with wet towel or with damp paper towels.
  • Step 2
    Place ribs in a microsafe baking dish. Add 1/2 cup water and 1 sliced onion.
  • Step 3
    Mix basting sauce.
  • Step 4
    Microwave ribs, covered, at MEDIUM HIGH power for about 10 minutes, turning dish once. Drain off juices. Remove onions.
  • Step 5
    Turn ribs over.
  • Step 6
    Brush with basting sauce.
  • Step 7
    Microwave at HIGH power, uncovered, for at least 10 minutes, turning and basting ribs with sauce every 3 minutes.
  • Step 8
    Rearrange ribs so the least cooked pieces are towards the edges of baking dish.
  • Step 9
    Microwave for another 2 to 3 minutes at HIGH power.
  • Step 10
    Let stand for a few minutes before serving.
