baked meatballs w/vegetable gravy

This is such a comfort food served over mashed potatoes and one we have enjoyed for years. I hope you enjoy it as much as we do.

Ingredients

  • 14 1/2 ounces diced tomatoes w/garlic, oregano and basil, undrained
  • 12 ounces homestyle beef gravy
  • 1 pound frozen fully cooked italian meatballs, thawed
  • 1/2 cup coarsley shredded carrot
  • 1 medium green bell pepper, chopped
  • 1 cup sliced fresh mushrooms

How To Make baked meatballs w/vegetable gravy

  • Step 1
    Preheat oven to 350 degrees. In ungreased 12x8 baking dish combine tomatoes and gravy; mix well. Add all remaining ingredients and stir gently to coat with tomato mixture. Cover tightly with foil
  • Step 2
    Bake for 50-60 minutes or until meatballs are thoroughly heated and vegetables are tender.
  • Step 3
    FYI: I have made this multiple times with the meatballs being frozen and it works just fine
