Ingredients
- 12 - corn tortillas
- 1 pound ground beef
- 6 cloves garlic minced
- 3 large jalapeno's seeded and chopped
- 1 can cream of mushroom soup
- 1 can red enchilada sauce
- 3 cups monterey jack cheese
- - fresh cilantro chopped for garnish
How To Make baked layered enchilada casserole

Step 1Preheat oven 350 degrees. Spray a 9 x 13 pan. Cook the ground beef over medium high heat with the onion, garlic, and jalapenos.

Step 2Mix the meat mixture with the soup. Spread a small amount of enchilada sauce on bottom of pan Place 6 corn tortillas in bottom of pan. Pour half the meat mixture on top. Pour some enchilada sauce on top. Place half the cheese over the sauce

Step 3Place another layer of corn tortillas on top. Top with the remaining meat mixture. Pour the remaining enchilada sauce over top and remaining cheese

Step 4Bake for 15 or 20 minutes until cheese is bubbly. Serve garnished with cilantro.
