Baked Layered Enchilada Casserole
1 lbground beef
6 clovegarlic minced
3 largejalapeno's seeded and chopped
1 can(s)cream of mushroom soup
1 can(s)red enchilada sauce
3 cmonterey jack cheese
·fresh cilantro chopped for garnish
How to Make Baked Layered Enchilada Casserole
- Preheat oven 350 degrees. Spray a 9 x 13 pan.
Cook the ground beef over medium high heat with the onion, garlic, and jalapenos.
- Mix the meat mixture with the soup. Spread a small amount of enchilada sauce on bottom of pan Place 6 corn tortillas in bottom of pan. Pour half the meat mixture on top. Pour some enchilada sauce on top. Place half the cheese over the sauce
- Place another layer of corn tortillas on top. Top with the remaining meat mixture. Pour the remaining enchilada sauce over top and remaining cheese
- Bake for 15 or 20 minutes until cheese is bubbly. Serve garnished with cilantro.
