baked ground beef & zucchini in spaghetti sauce
A great comfort food recipe and a nice way to use up zucchini. Serve with a salad and some garlic bread.

Ingredients
- 3 tablespoons olive oil
- 3 pounds zucchini, 1/4 inch slice
- 1/3 cup onion, finely chopped
- 1 pound ground beef
- 1 package spaghetti sauce mix (1 1/2 oz)
- 1 3/4 cups water
- 1 can 6-oz. can tomato paste
- 1 tablespoon olive oil
- 1/4 cup parmesan cheese
- 1/3 cup soft bread crumbs
- 1 package 8 oz. pkg. mozzarella cheese, sliced (or shredded)
How To Make baked ground beef & zucchini in spaghetti sauce

Step 1Combine oil, zucchini, and onion in a skillet and saute until tender. Add mixture to a prepared 2 qt. casserole dish.

Step 2Brown ground beef and once browned add the envelope of spaghetti sauce mix, water, tomato paste and 1 tbsp. oil.

Step 3Heat ground beef mixture to boiling and then reduce heat - simmer 10 minutes. Pour mixture over zucchini.

Step 4Combine parmesan cheese with bread crumbs and sprinkle over the top - stir to gently mix. Top with Mozzarella cheese and bake at 350 degrees until cheese is melted and slightly browned.
