This recipe is easy to make ahead. Just thaw before putting in over. It's also very portable!

Ingredients

  • 1 pound ground beef
  • 12 large fresh roasted green chili pods, seeded
  • 1/2 cup onion, chopped
  • 10 ounces cheddar or longhorn cheese, shredded
  • 1 1/2 cups milk
  • 4 large eggs, beaten
  • 1/4 cup all purpose flour
  • 1/2 teaspoon salt (or to taste)
  • 10 dashes bottled hot sauce
  • dash pepper to taste

How To Make baked chili rellenos

  • Step 1
    Brown beef and onion; drain fat off.
  • Step 2
    Sprinkle meat with ½ teaspoon salt and pepper.
  • Step 3
    Half chilies crosswise, remove seeds. Place half the chilies in a 10 x 6 x 1 ½ inch baking dish; sprinkle with cheese; top with meat mixture.
  • Step 4
    Arrange remaining chilies over meat.
  • Step 5
    Combine remaining ingredients; beat until smooth. Pour over chilies.
  • Step 6
    Bake at 350 degrees for 45 – 50 minutes, until knife inserted comes out clean.
  • Step 7
    Cool 5 minutes before serving.
