Ingredients
- 1 pound lean ground beef
- 1 pound ground pork, unseasoned
- 1 - egg
- 1/2 small onion, chopped
- 1/4 - red bell pepper, chopped
- 1 - celery stalk, chopped
- 1 - sleeve ritz crackers, crushed
- 2 teaspoons garlic powder
- 2 cloves garlic, minced
- 1 tablespoon paprika
- 1 can tomato sauce, 8 oz
- 1 pound maple bacon
- 1/2 pound pepper jack cheese, cubed
- 1 can green diced chiles, drained
- TOMATO GLAZE
- 1/2 cup brown sugar
- 1 tablespoon yellow mustard
- 1/4 cup ketchup
- 1 can tomato sauce, 8 oz
How To Make bacon wrapped meatloaf

Step 1Preheat oven to 350'.

Step 2Mix meats, onion, celery, red pepper, cheese and spices. Set aside.

Step 3Combine 1 can of tomato sauce with egg.

Step 4Add crushed Ritz to meat mixture, add tomato mixture and combine. Using your hands is the easiest method.

Step 5Lay strips of bacon in bottom and up the sides of a foil loaf pan making sure ends hang over the sides of pan. Add meat mixure, fold ends of bacon over top of meat. Bake for 60 minutes. I use 2 foil pans, a loaf pan for the meatloaf and a larger one to put the loaf pan in. Poke holes in the bottom of the loaf pan prior to adding meat mixture. Grease will drain into larger foil pan as it cooks, leaving virtually no clean up mess.

Step 6While meat is baking make glaze for top. Combine 1 can of tomato sauce, mustard, ketchup and brown sugar, stir set aside.

Step 7Remove from oven, drain. Pour glaze over meat. Bake uncovered for another 15 minutes.
