bacon covered freeform meatloaf
I got this recipe from Food Network's "Ten Dollar Dinner". I have tried numerous meatloaf recipes and this is the first one that does not require some sort of sauce to be poured all over the top to remain moist. It is very flavorful and very moist. My family really enjoyed this version of meatloaf and I have put it on my repeat list.

Ingredients
- 3-4 slices bacon, uncooked
- 2 large eggs
- 1/4 cup ketchup
- 2 tablespoons sour cream
- 3/4 cup plain bread crumbs
- 2 tablespoons onions, chopped
- 2 cloves garlic, minced
- - kosher salt/pepper =- to taste
- 2 - iltalian sausage - casings removed, crumbled
- 1 pound ground beef
How To Make bacon covered freeform meatloaf

Step 1Preheat oven to 375 degrees. In a large bowl combine eggs, ketchup, sour cream, bread crumbs, onions, garlic, salt and pepper. To this add sausage and ground beef. Combine with hands until well mixed.

Step 2Line a loaf pan (bottom and slightly up sides) with bacon. Pour meat mixture into loaf pan. Take a rimmed baking pan (cookie sheet) and line with aluminum foil, spray with cooking spray. Take loaf pan and invert it onto baking pan (you will now have a bacon covered freeform meatloaf). Tuck any loose bacon under meatloaf. Bake at 375 degrees for 50 minutes.
