baba's hungarian goulash

My family is of a Slovak/Hungarian decent and here is our version of Goulash past down from my Baba's Babas! Hope you enjoy.

Ingredients

  • 1 pound beef chuck (or stew meat)
  • 1 teaspoon salt
  • 1 medium onion, chopped
  • 2 tablespoons shortening
  • 1-2 teaspoon paprika
  • 3 medium carrots, sliced
  • 1-2 quart water
  • 4 medium potatoes, diced
  • - pepper to taste
  • ******* - optional: 1 diced up green pepper added when the onion has been added.
  • ******* - tip: when we serve, we serve in a bowl and add a dollop of sour cream on top for a delicious garnish.

How To Make baba's hungarian goulash

  • Step 1
    Cut beef into squares.
  • Step 2
    Chop onion and (the optional green pepper if you like) and brown in shortening until tender; add paprika and stir.
  • Step 3
    Add beef and let beef simmer in its own juice for 1 hour stirring often so that it does not stick or catch.
  • Step 4
    Add sliced carrots and simmer for 1/2 hour. Add water and diced potatoes and simmer until potatoes are done. Serve with Baba's homemade dumplings.
  • Step 5
    BABA'S HOMEMADE DUMPLINGS 3 cup flour 1/2 cup water 3 eggs 1 teaspoon salt Mix ingredients until smooth. Drop by edge of tablespoon into pot of boiling water. Cook about 10 minutes or until done. Drain. Add to goulash or serve goulash over dumplings. *TIP: Dip spoon into boiling water first.
