How to Make Awesome Meatloaf

  • 1Preheat Oven to 350

Cook bacon in large skillet over medium heat stirring often 8 - to minutes or until crisp. Remove bacon and drain on paper towels reserving drippings in skillet
  • 2Add onions, celery, garlic to hot drippings and saute 3 minutes
  • 3Add mushrooms saute 4 minutes.
  • 4Transfer mixture to large bowl and let cool to room temperature
  • 5Add ground chuck, breadcrumbs, eggs, cola, (bourbon), worchestershire, 1 1/2 tsp salt, 1/2 tsp pepper, 1/2 cup ketchup and cooked bacon to cooled onion mixture. Combine by hand.
  • 6Stir together brown sugar, 1/2 cup ketchup and soy sauce in separate bowl
  • 7At this point I made two small loafs and put on the ovens broiler pan. Brush top with mixture from #6. (Original instructions call for one loaf in lightly greased 9x5 loafpan.)
  • 8Bake for 1 hour and 20 min to 1 hour 30 minutes or until meat thermometer registers 155 degree. Reserve 1 cup drippings
  • 9GRAVY - 1 1/2 Tbsp butter; 1 Tbsp all purpose flour; 1/2 cup beef (or chicken) broth; the 1 cup of saved drippings; 1/4 tsp salt; 1 tsp freshly ground pepper; 1/4 tsp fresh lemon juice (I did not use the lemon juice)
