A friend sent this to me this morning... and it sounds sooooo good! Dinner's already in the crockpot for tonight, but I'm looking forward to next weekend! (It's from the Campbell's Kitchen) I think when I make it I'll take the time to season and brown the roast in my iron skillet first, I guess it preference.

Ingredients
- 4 cups peeled sweet potatoes cut in 1 1/4 inch chunks (about 1 1/2 pounds)
- 1 medium onion, coarsely chopped
- 2 medium granny smith apples, cored and each cut into 12 wedges
- 1 can (10 1/2 ounces) campbell's condensed beef broth
- 2 teaspoons dried thyme leaves, crushed
- 2 pounds boneless beef chuck roast

Step 1Place sweet potatoes, onion, apples, broth, and thyme in the crockpot /slow cooker. Add roast.
