Ingredients

  • 1 lb
    ground beef
  • 1 medium
    onion
  • 1 can(s)
    refried beans
  • 1 jar(s)
    7 oz of salsa
  • 1 sm can(s)
    green chiles
  • 6
    flour tortillas
  • 8 oz
    sour cream
  • 1 can(s)
    cream of celery soup
  • 12 oz
    mild grated chedder cheese

How to Make Aunt Carol's Awesome Enchiladas

Step-by-Step

  1. Brown ground beef & onion together then drain grease. Add refried beans, salsa & 2 Tbs. chilies....more if you like it spicy! NOTE: I will sometimes mix some in with the soup mixture below!
  2. Steam tortillas shells then fill w/meat mixture. Sprinkle with cheese, roll up & place in 9x13 pan.
  3. Mix sour cream, soup & 1 Tbs chilies together.
    Then pour the mixture over the Enchiladas.
    Sprinkle with remainder of shredded cheese.
  4. Bake @ 350 for 30 minutes.
