I am happy to adopt this recipe though I did change the name from Garlicky Stuffed steak to Apple Stuffed Steak...It look like it has potential so I decided to rescue it......

fresh parsley, minced, divided

bottom round steak, 2 inches thick

granny smith apples (diced with peel)

sage, dried
1/2 tsp
thyme, dried
1/2 tsp
rosemary, dried

How to Make Apple Stuffed Steak


  • 1Preheat oven to 400 degrees.
  • 2Combine 1 cup bread crumbs, 4 Tbsp parsley, 1/4 tsp each salt and pepper, 1/2 tsp sage, 1/2 tsp thyme, 1/2 tsp rosemary.
  • 3In small skillet melt 2 tablespoons butter over low heat.
  • 4Add red pepper, garlic, and diced apples.
  • 5Cook, stirring occasionally, until pepper softens and apples caramelize, about 8 minutes.
  • 6Remove from heat; stir in bread crumb mixture.
  • 7Cool to room temperature.
  • 8Place steak on work surface.
  • 9With knife cut pocket in meat by slicing steak almost in half lengthwise.
  • 10Open pocked; spoon in stuffing.
  • 11Tie in several places with kitchen string or toothpicks.
  • 12Melt remaining, butter and add garlic, then brush over steak.
  • 13Combine remaining bread crumbs (with out apples and bell peppers), parsley, salt and pepper.
  • 14Roll steak in bread crumb mixture to coat; place on rack set in roasting pan.
  • 15Cook 18 to 20 minutes per side for medium-rare.
  • 16Ready to serve in 1 hour 15 minutes.
