I am happy to adopt this recipe though I did change the name from Garlicky Stuffed steak to Apple Stuffed Steak...It look like it has potential so I decided to rescue it......

    fresh bread crumbs, divided
  • 6 Tbsp
    fresh parsley, minced, divided
  • 1/2 tsp
  • 1/2 tsp
  • 2 Tbsp
    + 1 teaspoon butter, divided
  • 1 small
    red or green bell pepper, diced
  • 2 Tbsp
    garlic (minced), divided
  • 2 1/2 lb
    bottom round steak, 2 inches thick
  • 1 medium
    granny smith apples (diced with peel)
  • 1/2 tsp
    sage, dried
  • 1/2 tsp
    thyme, dried
  • 1/2 tsp
    rosemary, dried
  • 1/4 c

How to Make Apple Stuffed Steak


  1. Preheat oven to 400 degrees.
  2. Combine 1 cup bread crumbs, 4 Tbsp parsley, 1/4 tsp each salt and pepper, 1/2 tsp sage, 1/2 tsp thyme, 1/2 tsp rosemary.
  3. In small skillet melt 2 tablespoons butter over low heat.
  4. Add red pepper, garlic, and diced apples.
  5. Cook, stirring occasionally, until pepper softens and apples caramelize, about 8 minutes.
  6. Remove from heat; stir in bread crumb mixture.
  7. Cool to room temperature.
  8. Place steak on work surface.
  9. With knife cut pocket in meat by slicing steak almost in half lengthwise.
  10. Open pocked; spoon in stuffing.
  11. Tie in several places with kitchen string or toothpicks.
  12. Melt remaining, butter and add garlic, then brush over steak.
  13. Combine remaining bread crumbs (with out apples and bell peppers), parsley, salt and pepper.
  14. Roll steak in bread crumb mixture to coat; place on rack set in roasting pan.
  15. Cook 18 to 20 minutes per side for medium-rare.
  16. Ready to serve in 1 hour 15 minutes.
