apple stuffed steak
I am happy to adopt this recipe though I did change the name from Garlicky Stuffed steak to Apple Stuffed Steak...It look like it has potential so I decided to rescue it......

Ingredients
- 2 cups fresh bread crumbs, divided
- 6 tablespoons fresh parsley, minced, divided
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons + 1 teaspoon butter, divided
- 1 small red or green bell pepper, diced
- 2 tablespoons garlic (minced), divided
- 2 1/2 pounds bottom round steak, 2 inches thick
- 1 medium granny smith apples (diced with peel)
- 1/2 teaspoon sage, dried
- 1/2 teaspoon thyme, dried
- 1/2 teaspoon rosemary, dried
- 1/4 cup crasins
How To Make apple stuffed steak

Step 1Preheat oven to 400 degrees.

Step 2Combine 1 cup bread crumbs, 4 Tbsp parsley, 1/4 tsp each salt and pepper, 1/2 tsp sage, 1/2 tsp thyme, 1/2 tsp rosemary.

Step 3In small skillet melt 2 tablespoons butter over low heat.

Step 4Add red pepper, garlic, and diced apples.

Step 5Cook, stirring occasionally, until pepper softens and apples caramelize, about 8 minutes.

Step 6Remove from heat; stir in bread crumb mixture.

Step 7Cool to room temperature.

Step 8Place steak on work surface.

Step 9With knife cut pocket in meat by slicing steak almost in half lengthwise.

Step 10Open pocked; spoon in stuffing.

Step 11Tie in several places with kitchen string or toothpicks.

Step 12Melt remaining, butter and add garlic, then brush over steak.

Step 13Combine remaining bread crumbs (with out apples and bell peppers), parsley, salt and pepper.

Step 14Roll steak in bread crumb mixture to coat; place on rack set in roasting pan.

Step 15Cook 18 to 20 minutes per side for medium-rare.

Step 16Ready to serve in 1 hour 15 minutes.
