- 1 cup green pepper, diced (or jalapeno, or you can use the small can of green chilies))
- 2 cups canned diced tomatoes (1 can can be rotel)
- 1 small medium onion, thinly sliced (optional for top layer)
- 1 cup rice (raw)
- 1 cup mushroom (can or fresh rinse can if using that)
- 1 can water
- - sprinkle old bay in between layers

Step 1Grease a casserole dish. Sprinkle each layer with salt and pepper before adding the next layer.

Step 2Place potatoes in the bottom of the casserole, rice, Add the layer of celery, carrots, garlic and onion. Add the layer of hamburger Add the green pepper. Pour the tomatoes over the mixture. Add another layer of onions.
