Growing up I never liked Beef Stew. As an adult, a friend asked me to make a batch of stew for him. I don't like cooked carrots so I omitted them from the dish. He loved it and so did I. I wondered why and then I realized there were no carrots in the dish. Aha......the mystery of why I didn't like stew was solved. I really love this recipe and yes, you may add carrots if you want.

Ingredients
- 1 pound beef, cut into bite sized pieces
- 1 tablespoon vegetable oil
- 1 - large onion, chopped
- 4 - ribs of celery, chopped
- 1 can beef broth
- 4 - large potatoes, cut into chunks
- 3/4 cup frozen green beans
- 3/4 cup frozen corn
- 1 cup tomato juice
- - salt and pepper, to your taste
- - garlic powder, to your taste
- 1/4 cup water
- 3 or 4 tablespoons corn starch
How To Make amish beef stew

Step 1Heat oil in stock pan. Add beef and brown. Add onion, celery, salt, pepper, beef broth and tomato juice. Cover and simmer 1 1/2 hours.

Step 2Add potatoes. Simmer 35 to 45 minutes. Add green beans and corn. Simmer 15 to 20 minutes. To thicken, mix water with cornstarch, add to stew.

Step 3Cooks note: I have also used V-8 juice in place of the tomato juice.
