Growing up I never liked Beef Stew. As an adult, a friend asked me to make a batch of stew for him. I don't like cooked carrots so I omitted them from the dish. He loved it and so did I. I wondered why and then I realized there were no carrots in the dish. Aha......the mystery of why I didn't like stew was solved. I really love this recipe and yes, you may add carrots if you want.

Ingredients

  • 1 pound beef, cut into bite sized pieces
  • 1 tablespoon vegetable oil
  • 1 - large onion, chopped
  • 4 - ribs of celery, chopped
  • 1 can beef broth
  • 4 - large potatoes, cut into chunks
  • 3/4 cup frozen green beans
  • 3/4 cup frozen corn
  • 1 cup tomato juice
  • - salt and pepper, to your taste
  • - garlic powder, to your taste
  • 1/4 cup water
  • 3 or 4 tablespoons corn starch

How To Make amish beef stew

  • Step 1
    Heat oil in stock pan. Add beef and brown. Add onion, celery, salt, pepper, beef broth and tomato juice. Cover and simmer 1 1/2 hours.
  • Step 2
    Add potatoes. Simmer 35 to 45 minutes. Add green beans and corn. Simmer 15 to 20 minutes. To thicken, mix water with cornstarch, add to stew.
  • Step 3
    Cooks note: I have also used V-8 juice in place of the tomato juice.
